ok,. this may sound horrible, but... if the wall sags the height of the flooring that was removed, how much damage occurs? I cleaned out the space between where the floor was, and was able to hammer the floor patch in place under the wall.... I wonder if you put and extra piece in the middle of the ...

I am having trouble picturing the problem.... if the floor went under the wall in the past, why can't you cut the old flooring off flush to the wall, and out to the edgeo of the first joist into the room you then put a 2 x4 onto the joist and the wall rim joist and at to make a ledge to hold the new...

not put in doors that go clear to the carpet with no gap, or blocked a return air duct?

is water getting under the home when it rains and staying there? sources can be bad grading (land slopes towards the home) or gutters or drip channels dumping the water too near the home and the water runs back under the home... a ditch may be needed lol. Dave, I often make a 36 inch square area of vinyl tile or allure plank vinyl floating floor by exterior doors. remove the damaged carpet, staple carpet edge to the subfloor.... screw a 1/4 thick 36 inch square of luann to the subfloor, use floor leveler on the screw heads, spray adhesive on the luan...

you may want to check the door handle that the screws are tight, and caulk around it...
not a major source of water, but several small leaks may be adding up on you....

could you put a screw on cover on the faucet temporarily until the repair? I have them on the drain on the water heaters, as an extra protection against leaks... less than 3 dollars of course, that will only help if the leak is coming out the end of the faucet, and not from the pipe or any connectio...

if you go the shutter route, I would really investigate what type of latch to use... maybe something as strong as the old fashioned brackets that a 2 x 4 fits in like you saw on frontier doors? high winds are going to be your problem, and if the edge of the shutter lifts up, the wind could catch it ...
