Another vote for the crimper. I use the type with the cinch clamps. I have never had good luck with the gator fittings, and I would not trust them in an area that will not see regular access, a tiny drip can quickly add up to major damage.

My opinion, gas. With wood, you will lose most of your heat up the chimney. With gas, you'll likely need just a small vent to the outside.

That looks like a very nice spot. I wouldn't worry about the porch, as it has been there so long without problems. What you should do is make sure water can't get between the ledger and rim joist. It can rot out easily there.

You for sure have had lots of condensation buildup on the underside of the roof. You already know that you need to install proper venting asap. I'd assume they will chew through PEX. I had to replace a section of PB under the floor because it was gnawed through.
I haven't had a problem since placing several bait stations inside the skirting.

There should be a gas shut off near the water heater; just turn that off, or turn the temp control on the heater to off. There's no need to turn off the gas or water to the whole home. If you have a separate water shut off to the wh, you can turn that off if the leak is bad enough.

Wait -- are you talking about drain or supply lines? I think ww fluid contains alcohol. If so, the alcohol will rapidly evaporate, and then you have just colored water. You mention an a/c vent; do you mean the condensation drip line? That should go outside. Make sure the dryer vent is outside the skirting also.
