Do they make flatter batten strips?

If I don't go the mud, tape, caulk, etc.. way, I'd be perfectly happy with some thinner batten strips that don't stick out as much.
Is this a possibility?

You could try screen molding. I don't know if its really thinner but its not as wide. Install them before you paint. Use a paintable silicone/caulk along the edges to hide the dark line/shadow. Hopefully it will help to make them less noticeable.

Good Luck

When we were home shopping, we went into one make (can't remember the name) that had flaps that stuck over the joint. Basically the paper from one wall board extended about an inch past itself and lapped over and stuck to the next one. We didn't mind that look at all. Matching up a particular print after-the-fact though may be difficult.
