Insulation above kitchen ceiling.

I've torn out my kitchen ceiling and will replace it by simply stapling 2'x4' ceiling tiles to the joists and covering the seams with trim. There was a 2" thick roll of insulation above the old ceiling which makes it less than an R11 and 3" is as thin as I can get from Menards. The ceiling goes from 4.5" at the peak to 2.5" at the wall. What to do?

You should be fine with 3" insulation.
